Mac OS X Hints has a little tip on how to set up a special number in the iPhone's contacts so that you can voicemail yourself. I've tried it, and it's pretty handy for recording memos. I'd bet that Apple will make this obsolete soon by adding a memo recorder, but until then it's a good solution. Visual voicemail makes it particularly easy to access, because the message shows up as coming from you.
